I find that lots of freshly grated black pepper is essential for spicing up a salad, yoghurt and mint is the perfect dressing - if not, freshly grate some parmesan and then drizzle everything with balsamic vinegar
if you want extra crunch (no, not a Crunchie! that's elsewhere) toast some sesame seeds, pumkin seeds, linseed, pinenuts and scatter them all over. . .
